From my personal experience - hamstrings come near the top of the list. According to a physio I turned to, alot of back problems in men come from hamstrings that are too tight. another is the forearm/wrist area, carpal tunnel syndrome is quite common in windsurfers. Ankles/calves/thighs probably, especially for formula sailing where shins/calves take a big strain.

Done a bit of biomechanics in the area.

A swimmers flexibility routine is a good one to follow. These include all the leg extensors, lower back and lats.

Try to do these exercises when warm.

You might also want to try active stretching exercises with a partner.
