I am on a SB160 + neil pryde RS5 10.7m.

Add to that the Exocet black machine and off course the new SB, out in September.
Top guys will tell you that if you want the best out of your board you need a good fin as well. ( as important as the board).
deboichet, vmg, kashy hurricane are the brands that come to my mind. look for second hand ones.
As for rigs, size will depend on your weight and skills:
i am 65kg and use 10.7m. but heavier sailors with better skills than me are using 10m and planning faster than me...
Remember that if you sail in very hot weather the wind has a lot less strength for a given speed. You can therefore hold on to your sail longer as the wind picks up.
I believe that if you are going down the formula route you should get the full race sails. (gaastra vapors, TR4s/5s, pryde RSR , etc). they are powerful and very stable when overpowered and will be overall more comfortable sailing than the free race sails ( gaastra gtx, pryde RSS, etc).
If you are going to sail 10m+, you need a carbon boom and at least 75% carbon mast. ( if not 100%). alum boom are too flex and won t be able to handle the power of the sail. Additionally, your rig will be significantly lighter and more responsive ->once you learn to use it, you ll get on a plane earlier...
Also get an adjustable outhaul kit. this will allow you to regulate the power of the rig easily.
Unless money is no object, try to get your first formula + rig second hand. depending on where you live you ll find plenty or 4 to 5 year old equipement at very reasonable prices. If you like it, you can always upgrade to the latest and greatest :-)
